Surmai Fry (Kingfish Fry)

One of the most popular Malwani seafood delicacies — kingfish marinated in coastal spices, coated in rava, and shallow-fried to golden crispness.

Ingredients (Serves 4)
6 slices surmai (kingfish)
1 tbsp ginger-garlic paste
2 tsp Malwani masala powder
1 tsp turmeric powder
1 tsp of Konkum agal
Salt to taste
3 tbsp rice flour
3 tbsp semolina (rava)
Oil for shallow frying
Method
Clean fish slices and pat dry.
In a bowl, mix ginger-garlic paste, Malwani masala, turmeric, lemon juice, and salt.
Coat fish slices evenly with the marinade. Rest for at least 30 mins.
Mix rice flour and rava in a plate. Coat marinated fish in this mixture.
Heat oil in a pan and fry fish on medium flame until golden-brown on both sides.
Pro Tips
Do not overcook — 3–4 mins per side is enough for surmai.
For extra crispiness, lightly press fish while frying.
Serving Suggestion
Serve hot with onion rings, lemon wedges, and sol kadhi.
