Surmai Fry (Kingfish Fry)

One of the most popular Malwani seafood delicacies — kingfish marinated in coastal spices, coated in rava, and shallow-fried to golden crispness.

Ingredients (Serves 4)

  • 6 slices surmai (kingfish)

  • 1 tbsp ginger-garlic paste

  • 2 tsp Malwani masala powder

  • 1 tsp turmeric powder

  • 1 tsp of Konkum agal

  • Salt to taste

  • 3 tbsp rice flour

  • 3 tbsp semolina (rava)

  • Oil for shallow frying


Method

  1. Clean fish slices and pat dry.

  2. In a bowl, mix ginger-garlic paste, Malwani masala, turmeric, lemon juice, and salt.

  3. Coat fish slices evenly with the marinade. Rest for at least 30 mins.

  4. Mix rice flour and rava in a plate. Coat marinated fish in this mixture.

  5. Heat oil in a pan and fry fish on medium flame until golden-brown on both sides.


Pro Tips

  • Do not overcook — 3–4 mins per side is enough for surmai.

  • For extra crispiness, lightly press fish while frying.


Serving Suggestion

Serve hot with onion rings, lemon wedges, and sol kadhi.
